Treating our vines with love isn’t always enough for them to bear fruit. To protect our vineyard from inclement weather and to reap the rewards of the first blossoms, Domaine St-Jacques is covered with a geotextile. This cover protects our vines from November until April.
The months of April and May are abloom with clusters of tiny flowers, followed by a period of ripening and organic grape growing until the harvest. Everything we do is motivated by our obsession with balancing the quality of our vines with our concern for the environment.

The harvest is one of the biggest, most anticipated times for a vintner. At the end of September, our grape pickers gather to harvest the fruit we’ve pampered all year long… so we can discover the balance hidden within the grapes.
During devatting, which follows alcoholic fermentation, the marc is separated from the must. All tannins are removed from the grape skins, the sugar turns to alcohol and free-run and pressed wines are created.
Wines matured in barrels benefit from graceful, balanced aging. This maturation process transforms our wines into a product that reveals the very nature and quality of our expertise.

This solid, macerated substance contains the skin and the seeds of our grapes. The marc obtained before fermentation goes to pressing to make pressed wine, a bold tannic liquid, essential to creating our superior quality red wines.
