Treating our vines with love isn’t always enough for them to bear fruit. To protect our vineyard from inclement weather and to reap the rewards of the first blossoms, Domaine St-Jacques is covered with a geotextile. This cover protects our vines from November until April.
The months of April and May are abloom with clusters of tiny flowers, followed by a period of ripening and sustainable grape growing until the harvest. Everything we do is motivated by our obsession with balancing the quality of our vines with our concern for the environment.
Some people know how to master a situation. Our employees do it by putting their heart and soul into our vineyard. From the work on the vine until the final product in your glass, their efforts contribute to the quality of our wines and the expression of our identity.
One of the secrets to our success regularly strolls amidst the rows of vines—he’s a relentless perfectionist devoted to making our terroir flourish. Gurmel has a hand in every aspect of the field and his passion for the vine contributes to the evolution of each parcel of land.
The genetic heritage of our wines stems from the warm weather and the balanced soil. This combination of microclimate and the perseverance of our men bears the fruit of the terroir and contributes to our excellence.
The harvest is one of the biggest, most anticipated times for a vintner. At the end of September, our grape pickers gather to harvest the fruit we’ve pampered all year long… so we can discover the balance hidden within the grapes.
During devatting, which follows alcoholic fermentation, the marc is separated from the must. All tannins are removed from the grape skins, the sugar turns to alcohol and free-run and pressed wines are created.
Wines matured in barrels benefit from graceful, balanced aging. This maturation process transforms our wines into a product that reveals the very nature and quality of our expertise.
Luc is our ultimate palate. His finesse and his nose work their magic when our assemblage is finally tasted. For Luc, tasting is a discovery—a cherished time to taste each note of a new vintage and savour the signature of each batch.
A long journey comes to an end and the vintner can finally feel a sense of accomplishment. And they can see the appreciation and satisfaction on the faces of wine enthusiasts.
Our boutique is like a second home. It’s filled with the aroma of aged oak and a family feel that recalls life’s simple pleasures. Our shelves are brimming with meticulously stocked bottles… but don’t worry, you’re always welcome to a tasting.
This solid, macerated substance contains the skin and the seeds of our grapes. The marc obtained before fermentation goes to pressing to make pressed wine, a bold tannic liquid, essential to creating our superior quality red wines.
